First Blood!
First cut of the culinary journey on my thumb! I will never forget that! What an experience it was to debone my first chicken and seabass. Had a hard time thinking of the best way to maintain as little wastage while filleting the seabass and deboning the chicken as much as possible.. Learning from my classmate boh yun was really good. Quick and clean filleting of the fish was amazing. I learned that he took 1 and half years in an Japanese restaurant to reach that level. Time to save money to buy back home some chicken and fishes to practice. Practice will never make perfect but will be better!

Crazyness
what a weekend with my buddies! We went to geylang to eat smelly tofu for the first time in my life.(description smell like rubbish!!~_~) After eating decided to go and play pool, was so funny taking pictures of (censored, censored) while playing! Timo went nuts laughing away. We walk all the way down geylang road to find our steam boat! we ate like pigs and took picture of our bellys for the fun of it. The next day all of us shit and shit haha due to our fun>.< Election was so late into the morning and i just watch for the fun of it. The trend of PAP losing votes compared to last term is impressive! Studying on monday should be as fun as this i hope!

What a fast paced week
As another week pass by so quickly, so many projects i receive so quickly too... Its been a fun week, celebrating Ming Hui's birthday at swensens with 9 of my other classmates and taking funny pictures of my tiko friend brandon( which he admits himself lol).. Didnt get to finish my first project due to the need for special pass from SIA. Today at church my youth pastor talked about Crisis in life, it was amazing how Constantine(Roman Emperor) made Christianity a known religion during their time..
Many a times we use feelings to express our decisions instead of looking at the bigger picture in this post modern world today. I continued after sermon to have rehearsal for the 50th anniversary of my church which is a few different stories from the bible and a many wonderful songs sang by the choir! I am hoping to invite friends to go to the concert as many as possible. Thats all for now i guess.. Tmr is labor day. I hope this coming week will be spend meaningfully.

Busy!
Last few days had been busy as it was Good Friday! Different people have different thoughts for good friday. some said Jesus died just to have this public holiday once a year... I was giggling in my mind as for Good Friday to me, it is why we have hope after death.. One of the few words that i pick up during my Church's sermon that day was that ''Jesus died and ROSE AGAIN'' which makes it why its different from other religion. I had a wonderful day pondering on what God has done for us.
Saturday was exciting as we had our group project which was with my fellow class mates and my good buddy Eugene.. We went to Siva's workplace at astons specialties at farrer park late in the afternoon for lunch. The project had something to do with customer service. I ordered what Eugene ordered which was Ribeye steak xtra cut.(medium rare) and yi cheang ordered some chicken wings. While waiting for the order to come we saw this random guy's tattoo showing 3 words( hate forgive and... oops i forget what was the last word). They had a fun time trying to take picture of that tattoo without letting the guy notice.
Our order came with the drinks we also ordered. Since we had the same steak we decided to see the texture of the meat. Mine was perfectly done but my buddy's steak was bloody red.. rare!
So we decided to do the questions as we have such a good example of customer service..When we asked for the steak to be reheated we had to transfer the steak into another plate for them which i found it wierd.. but the steak came back after heating fast.. Eugene said that the steak was very tough to eat.. He was disappointed with his meal.. When he ask for more mushroom sauce the service staff which worked like a trainee just took it and came back and left it at the side of the table without passing back to eugene and mumbled here is your mushroom sauce which only i could hear as i was closest to him.. We were all abit dissappointed but not until Siva's manager came over kindly who was in the kitchen to have a talk with us on service. He spoke very truthfully, patiently,understandingly and many other good points>.<
When i paid for the bill when the rest was either at the restroom or finishing up our project, Siva's manager was looking at the counter for our bill and found out that his staff did not type in the order for the drinks and kindly said i didnt need to pay for it. It was so nice of him.
Siva left early and we finish off the day by going to the NTUC to buy some ingredience that Eugene needed for soup..
Sunday started off with a surprise for one of my youth menthor's bithday celebration. Some of my other youths made a really nice birthday card with very EPIC Pictures of him taken in the pass. After the celebration we had combine easter sunday worship with the adults. The Choir sang beautifully and the sermon was very fast paced but meaningful. I went out with my youths after choir practice to see my other friend who was mascotting at united square as a blue mouse for some kid's event.. It was cute to see someone i know in the mascott.. I tried my first mouth of sogurt from my friend's cup. Sogurt is so expesive!!! $3 for 100g! Maybe buying ice cream is more worth it for me.... Went home and played some games with my DCS Classmate online and went to sleep for a new week ahead..

3rd day In DCS411B
Early morning was abit hungry before reaching school so bought 2 char sao bao, tasted average..
First lesson was with Mr Nate, watched a video of david letterman interviewing my favourite chef Gordan Ramsey. Discussed with the class about knowing what is needed to be a chef and a article about another Chef. Learning,Study and Hardwork was the 3 key words i took away from his lesson.
For Lunch, Mr Nate kindly show us the way to the industrial canteen which was said to be cheaper but wasnt true>.< Got cheated... I ate vegetable rice with my good buddy Eugene.
Second lesson was with Chef Daisy, Covered about vegetables and part of fungi which is one of my favourite ingredients to eat=). Reading in advance about vegetables helped me alot! Tomorrow would get to see some Truffles. Saw interesting pictures of different mushroom and vegetables.
Last lesson was with Chef Samson, covering all about safety in the kitchen and showed us some of his personal knifes which was nice and got to hold some of them! Got to let Timothy to greet hahahaa Went to the IS kitchen to do role play which was abit wierd haha..
It rained after school so i shared umbrella with Eugene to the station and ate dinner.Dinner was bad as ba kut teh taste exactly as prawn soup...
I guess thats all for today and I got to know more duties as a class Rep i needed to do.

2nd day in DCS411B
Before heading to school I had lunch at a hawker near school, I decided to try the minced meat noodle. While ordering i had nice little chat with the chef about school life and what is good at his shop which was black pepper something.. i forget haha... I told him i will try another time.
First lesson of the day was with Chef Daisy, being the class rep I was told to collect money and buy the book.. after buying.. i wanted to give all the people there their 10 cent change but most of them dont want haha so nice. My wallet was full of coins. All the coins came in useful luckily later in the day for buying recipe file where i gave the change of coins to my classmates.
Chef Daisy gave us our study guide and went through the first chapter about food.The Main points were how IMPORTANT that you KNOW YOUR INGREDIENTS before cooking and a BALANCE MEAL was what i got out of the lesson!!Home work was to read about vegetables.
Waited with Eugene for our last lesson which felt like forever as we explored the school. I entered the school library for the first time which was small and comfy. Haha we drank ice milo from and old school vending machine haha. Memories from long long ago...

Got to know which stoves we were using and some of the kitchen things that we need to take note of briefly and some important duties for me to take charge were told..
Paid for our knife sets and recipe file which was lots of money>.<
After class me and Timothy the other class Rep when with Chef Samson to his staff room for counting money and getting to know his table. Manage to see most of the Chefs around his staff room and saw Chef Adrain who interviewed me again^_^
Thats all for now i guess.. Long day tommorrow and have to wake up early=(

First day In DCS411B
First day of school at last after a long long break..
Got to know 2 chefs and 1 language teacher.
Got to know 2 new friends Zairu and Eugene.
Manage to talk to my Junior James Lee from my secondary school which was nice and met my old classmate..
First lesson was with my host menthor Chef Samson, he gave us a wonderful introdution of himself and what it is to be a chef. Determination and Attitude was 2 words that i will always remember=)
Second lesson was with Chef Daisy who will be teaching me essentials to food knowledge. Very inspiring introduction of how she start as a waiter and wanted to be a Chef.
Third lesson was with Mr Nate who has made english way more exciting then my secondary school teacher haha! Just saying the truth.
I thank God for blessing with 3 very nice menthors.
Got to enter one of the kitchens which was quite nice and big.
I guess thats it for now.
